There’s No Cooking When Mommy’s Away #FrozenFacts

Last week, as I was getting ready to head to Blissdom, I had a lot of anxiety about Jeff taking care of the kids and trying to make sure everyone would still be happy even though I wouldn’t be home to steer the ship, like I usually am. I knew he wouldn’t take them anywhere because honestly, it’s tough for ME to take them anywhere, and I do it everyday.

I made sure they had plenty of snacks and meals the boys would be happy with. But, when it came to Jeff, I was a little stumped. This was his first time having all three of our little ones under 4 for this amount of time (2 full days).

Recently, I’ve been hearing more and more about the quality of frozen foods and when I participated in the #FrozenFacts twitter party, it really helped me understand why meals from the freezer section really can be just as good or better than what you create in your kitchen.

There were a couple of myths I learned the truth about.

  • Frozen foods are not made with fresh ingredients and are highly processed.

    The truth is, these meals are made with fresh ingredients like crisp vegetables and tender meats. All vegetables are picked at the peak of freshness and most make it in the freezer from the farm within 24 hours.

  • Frozen foods are not good for those trying to eat healthy or even lose weight.

    Meals, like Healthy Choice and Marie Callender’s, provide built in portion control and are a tastier option than shakes and meal replacement bars. The two brands combined have more than 80 meals with less than 400 calories. The Dietary Guidelines of America state that there is strong evidence that portion control is a beneficial strategy for weight loss.

For these these reasons, I knew Jeff wouldn’t mind if I left him with a few ConAgra frozen meals, like Healthy Choice Cafe Steamers. After trying one myself, I thought he would love the ease and speed of preparing the meal and the flavor. Oh my goodness was it really really good!

Another reason I wanted him to like this so much was because I wanted him to be happy while I was gone. If he was happy while I was gone, I might be able to be gone again without getting too much flack from him. ;)

Feeling Oh So Pretty With CoverGirl and Olay #BeautyScoop

I used to be such a makeup junkie. I loved trying new products and I never hesitated to fill up my makeup bag whenever I could. I loved makeup so much that I spent a little time working behind the makeup counter at a local department store while I was in college.

I was more than happy to take a little time with her and see what kind of things she could recommend for me. Who doesn’t love talking makeup with someone who really knows the products??

Right off the bat, it was so obvious my beauty consultant, Patty, really knew her stuff! The first thing she asked me about was my skin care. I explained to her my biggest concerns with my skin are the signs of aging I’m starting to see. She immediately recommended the Olay Regenerist Microsculpting Cream.

Getting ready for date night was half the fun of the whole night, knowing I got to open up these brand new products and use them for the first time!

Jeff and I had a great time celebrating 6 years of marriage with a sushi dinner — our favorite!

It was so nice to have an evening to dress up and feel good about myself when I spend every other day of my life taking care of little people and putting my needs on the backburner. It definitely helped to hear Jeff compliment me all night. I’m already planning our next night out just so I have another excuse to get fixed up!

Favorite Places to Travel

Truthfully, I could go on and on because I’ve never been to a vacation spot that wasn’t my favorite. I’m pretty easy to please. I just really like to get away. :)

I will be honest, though. As much as I love skiing (Crested Butte was awesome!), I don’t love cold weather and all of the gear that has to be packed in preparation for it stresses me out!

I much prefer the heat and simple packing the beach trips call for. :)

Mexico

I haven’t ever tried to count the amount of times I’ve been to Mexico, but when you live in Texas, it’s a pretty easy destination for “exotic travels.”

My parents started taking me when I was young and it was then that I fell in love with the Spanish language. More on that in just a minute.

My favorite vacation to Mexico was our honeymoon in 2007, of course! We stayed at El Dorado Royale in the Mayan Riviera, very close to Cancun. The resort was amazing and we have yet to find a place that even compares. The food was just incredible.

We  took a trip back to the area in 2008 with 11 other friends. We stayed in an all inclusive resort, this time. The resort was not so great but only because we did NOT like the food. Thankfully, the company we had more than made up for it.

Jeff and I took a little excursion with another couple to the Mayan ruins of Tulum. I had been there before, but it had been a VERY long time.

Our last trip to Mexico was in 2011, when Jeff’s best friend tied the knot, on the beach!

We stayed at Azul Fives hotel and loved everything about it. The best part of the whole trip was actually spending time in the pool, with these crazy people….our friends. :)

Remember when I mentioned falling in love with the Spanish language? I spent 4 months soaking it up while I lived in San Jose, Costa Rica on a study abroad trip in 2003.

Pacific Coast Sunset

It’s one of the most beautiful places I’ve ever been two and felt like it was a privilege to spend the amount of time I did there. I was able to travel in to Panama, do some zip lining in a cloud forest, soak in the natural warm baths right outside of Arenal, the country’s only volcano, and even feed watermelon to wild monkeys.

My parents and best friend were able to visit me during Spring Break and my mom still has these pictures from her trip. It’s a good thing, too, because I can’t find any of mine. :(

If I had only one word to describe Costa Rica, it would be “GREEN!”

It was truly a dream come true and I am constantly trying to plan in my head when I can go back and take Jeff.

This was such a fun post to write because I constantly find myself dreaming about our next vacation, whether it be just the two of us, or with some kiddos. ;)

I always think about ways to start up an account to save for future vacations. Maybe I’ll get serious about that idea this year. ;)

One Last Swim

Our Labor Day weekend was VERY laid back, as have been most of our weekends lately.  Something about having a new baby in the house makes us all hunker down and just hang out together.

Or, maybe it’s that I dread taking three small children out of the house at one time.  Yep, I think that’s probably the real reason. :)

Nevertheless, we’ve been finding ways to enjoy our time together at home.

On Sunday afternoon, Jeff and I were out back cleaning things up.  Jeff was in the pool doing some cleaning and maintenance when nap time finished up.  First Langston made his way to the back door wanting to come outside with us and it wasn’t long before Riverson was yelling for me to get him from his crib.

Less than two minutes after I let them outside, they started asking to get in the pool with Daddy.  So what do you do on a beautiful, hot day at the end of the summer?

You let ‘em swim!!

After all, it could be their one last swim of the summer.

And, who needs a swimsuit, really?

I haven’t had my big camera out lately, since I usually have a baby in my arms these days, but I’m so glad I ran to grab it!

These boys had a blast with their daddy and every single squeal made me laugh over and over.

They couldn’t get enough….

…and I just kept snapping.

They wanted Jeff to jump….

….again and again.

Is there anything better than hearing your kids laugh and squeal with so much happiness??

 

My Natural Childbirth

I had my natural childbirth.

She’s finally here!!!

The wait is over.

Monday morning, I had made up my mind that I was going to ask my midwife to strip my membranes and see if that didn’t get labor going.  My appointment wasn’t until Tuesday afternoon, but I called first thing on Monday to see if they could get me in that day.

I got squeezed in at 10:00 that morning and we DID decide to strip my membranes, after she told me I was now dilated to a 3.  This was good since I was dilated to 1 1/2 the week before.  As I left, my midwife said, “Research shows that if stripping the membranes works, it will work within 48 hours.”  I was so hopeful it would put me in to labor THAT day.

By the afternoon, contractions had started and I was CONVINCED we were having a baby Monday night.

Kelly, who’s due in November with her 2nd baby girl, came over and stayed with me.  My mom, who was also there to take lots of pictures, came right away, too.

We did some walking to try and get contractions going.

After contractions were consistently 6-8 minutes apart for a few hours, I made the call to the on call midwife, Leslie.  After a few conversations with her every hour or so, we finally decided to meet at the birthing center at 9:45 so she could check my cervix and see if there had been any change.

There hadn’t.

I just couldn’t understand how I could be having contractions for several hours and they were doing nothing to help with labor.

It was the first time I broke down in frustration.

I was ready to be done with my pregnancy.

I wanted to have a baby.

I couldn’t understand why this baby inside of me did not want to come out.

I was done with being patient.

Leslie offered for us to stay another hour and see where we were at after the hour.

I was so frustrated, I just wanted to go home and go to bed.

She gave me some Tylenol PM and suggested I go home to take a bath or shower.

Still having contractions, even after deciding to go home.

We left the birthing center at 11:30 and I made Jeff drive us through Jack in the Box.  I wanted to eat something good that wasn’t good for me!  I figured I deserved it. :)

I’m so glad I did.

When we got home and had time to eat, contractions started getting stronger.

I took a shower.

I was finally able to fall asleep, but had my mom sleep with me so Jeff could get some uninterrupted sleep and go to work the next day.

Little did we know, he actually wouldn’t be going to work the next day.

Contractions woke me up during the night and they were strong enough to force me up on all fours in my bed, just to get through them.

At about 6:45, I gave up and decided to get up for the day and really think about how these contractions were progressing.

At a few minutes after 8:00, I made my way downstairs to eat breakfast.

It never happened.  I went to the couch and started fighting through some intense contractions, with my knees on the floor and my elbows on the couch.  They were only getting worse and closer together.

Jeff heard me fighting through them and asked for an update, meaning how close together were they.

I told him they were so much stronger than they were the day before and had been coming anywhere from 4-7 minutes apart.  I knew this was serious.

By this point, my mom was downstairs with us and they both knew the plan.  They asked if there was time to shower and I told them, “Yes.”

Thankfully they both took quick showers.

A few minutes before my mom came back in to the living room, she heard me holler for her.

I had just felt the baby moving down in my body.

It scared me.

I thought there was a possibility we weren’t going to make it to the birthing center before the baby was born.

I told her to get a towel, which she did, and then brought it to me asking what I wanted to do with it.

I said, “Bring it in the car with us just in case we don’t make it in time.”

I think me saying that scared her to death and she started hollering for Jeff.

He came running in and we rushed out of the door at about 9:40.

I know he drove fast but I have no idea how fast because my knees were in the floor board and my elbows were in the seat, with my head down.  It was the only comfortable position for me.

After fighting through several contractions when we got to the birthing center, it probably took me a good 7-10 minutes to get from the car to the birthing suite upstairs.

Because another mom had just given birth a couple of hours before, the main birthing suite with the big birthing tub wasn’t available.  We went in to the second suite, with the claw foot tub, and it’s a good thing we did.  More on that in a just a minute.

Kelly met us there and she went to work being awesome, right away.

Kristin, the birthing assistant, was with me every step of the way.  She knew I was there to stay and went to get Carol, the midwife, to do a cervical check.

Carol was asking me if I could get on the bed so she could check my cervix. I could hardly stand the thought of laying in the bed on my back, but I knew I had to.

Jeff helped me get in the bed and after the cervical check, Carol said I was FULLY DILATED!!

I couldn’t believe it.

I thought for sure I would still have more work to do with contractions before I would be ready to push.

Carol said I could get in to the tub whenever I was ready to since my body was ready.

Jeff helped me to the bathroom and got me in to the tub.

It became a waiting game.

The warm water from the tub made me feel so much better {I can see why it’s called “nature’s epidural”}, but I was still fighting through painful contractions.  We were just waiting for me to have the urge to push.

I got impatient and just started pushing.  I wanted her out!

Carol helped me through some pushes and when baby girl was starting to crown, she asked for someone to hold my leg while she guided the baby out.  Kelly grabbed my leg and with three big pushes, she was on her way.

Carol told me to stop pushing just long enough for her to pull the cord from off of her neck. {SCARY!}  Then she pulled her out and put her right on my chest, at 10:37 am.

The picture looks like she was screaming her head off, but she hardly cried and it was so soft.

It was almost like she was so peaceful coming out in the water.

I actually had to look down and make sure there were girl parts.  I guess part of me still questioned. :)

And then it hit me….

I have prayed for this little girl to be a part of our family and my life for so long.

Our family was complete.

The whole experience was amazing.  My natural childbirth was exactly what I wanted.

My mom got to cut the cord. Since Jeff became the photographer, the picture doesn’t actually show her cutting it. Take my word for it that that’s what she’s doing.

We were at the birthing center for 40 minutes before she was born.  The big birthing tub I had planned to use takes 45 minutes to fill up.  Had we been in the main birthing suite, I might not have been able to have the water birth experience I wanted so badly.

Happy Birthday

On Sunday, we had a little celebration for a couple of birthdays in our family.  Jeff had a birthday yesterday and we still hadn’t had an official celebration for Langston’s 3rd birthday.  With so much going on, I finally had to give in to the fact that I just couldn’t get it all done.  Langston didn’t have a birthday party and I finally had to be ok with it.

He won’t remember, thank goodness.  But, if he remembers anything, I hope he remembers that we celebrated him! :)

The kids had a blast in our blow up pool, as well as the big pool.

Yes, the big kids are in to this whole mud business lately.  Seems gross to me, but they had a blast getting dirty and that’s all that really matters.

Jeff grilled out for our family, my brother, and our parents.  We had an awesome relaxing day celebrating these two birthdays.

I even whipped up a super easy Pinterest project!

On Tuesday, for Jeff’s actual birthday, I had a couple of surprises up my sleeve.

My dad gave us a gift card for Del Frisco’s, for Christmas.  I’ve held on to it all of this time, just waiting for the perfect occasion.  Luckily for me, he completely forgot I had it.  I told him our dinner reservations were for 8:00 and he needed to “look pretty.”  He never knew where we were going.

Fortunately, Jeff’s mom and step-dad were more than willing to watch the boys while we had a night out.  {I AM SO THANKFUL FOR GRANDPARENTS!!}

Early in the afternoon, I was able to get Jeff’s best friend and wife to join us for dinner.  It was yet another thing Jeff had no idea about.

Let’s just say, he discovered we were eating at his favorite restaurant and saw his best friend was joining us at about the same time.  He was a happy guy and my mission was accomplished!  I love surprising him and putting a smile on his face!  He was DEFINITELY smiling!

Because we were out late doing birthday celebrating, we took every opportunity to be as lazy as possible yesterday, for the 4th.  While everyone was out BBQing, watching parades, and swimming, we were home watching movies.  It was fantastic to have some down time while Daddy was home for the day.

Umbi {my step-dad} even stopped by to visit us and brought us lunch.  We’re spoiled. :)  The boys got to have a living room picnic with their Whataburger.

Since I can’t sit still for too long, I started working on a new project I’m soooooo excited about!!!  I still have a few things to do before I can really love it, but here’s a sneak peek.

I’ll be working on finishing this up today but I hope you all are recovering from the 4th of July holiday!

The Key to His Heart

I never really cared much about cooking when I was growing up.  Basically, all I can remember wanting to cook when I was growing up were chocolate chip cookies.

My mom was a good cook, but I don’t remember us having sit down homemade meals, regularly.  And, I’m ok with that.

However, when I went off to college, I didn’t even really know how to brown meat.  Sad, I know.

My roommate, Audrey, had to teach me how to make Hamburger Helper! Ha!  I’ve come a LONG way since those days. :)

When Jeff and I started dating, I quickly realized the key to his heart was definitely through his stomach!  He loved loved loved a good home cooked meal and I really enjoyed making new recipes.  It made me feel good knowing he liked something I made and it really just fueled the fire to find more recipes he would like.

I was really excited when I was sent some free samples of the new Knorr Homestyle Stock for free!  Y’all know I love free stuff!

I took a look at some of the recipes included in the package and settled on Lemon Chicken Primavera.  My favorite part about the recipe was that it said “Prep Time: 15 minutes” and “Cook Time: 10 minutes.”  Yes, easy makes me happy and yummy makes him happy. :)

And, wouldn’t you know, when I got all of the ingredients together to take this nice, pretty, picture for you, I forgot the flour. So yes, flour is another ingredient. :)

Also, I substituted lemon juice with lime juice.  Honestly, I walked up and down every aisle in the store and couldn’t find lemon juice.  I didn’t feel like asking someone and the boys were getting feisty so I googled “substitution for lemon juice” and realized lime juice would do just fine.  We had plenty at home. :)

My favorite part of the recipe was getting my hands dirty.  I love doing this for chicken fried steaks, too.  After dipping in eggs and flour, my chicken looked like this.

After finishing everything up, here’s a look at the finished recipe.

Served with some rice, and y’all, this was delicious!!  You could even try it with different vegetables besides asparagus.  Jeff loved it and that’s all the confirmation I needed.  This recipe’s going in my recipe binder so we can have it more often.

I’m a big fan of the Knorr Homestyle Stock.  I love that each tub makes 3 1/2 cups and it’s more cost effective than buying the cans or cartons.

I Just Can’t Get Enough

He loves to make us laugh!

Saturday, we had a fun fun day!!  We started out the morning at our neighborhood Spring Fling.  Riverson had his very first experience jumping in a bounce house and he loved it!  Here he is jumping with our friend Knox.

I love that Knox is in our pictures on this post today because today is his birthday!!  He’s TWO!!  We can’t wait to celebrate with him tomorrow at his party!

After the Spring Fling, we sent Riverson to Meemaw’s house for the afternoon.  He would not have done well at the LSU crawfish boil our whole family has been so excited to attend!

Jeff and I loaded the big kids and Langston up to head to our favorite yearly crawfish boil.  Y’all this isn’t your average crawfish boil.  This is serious business!!

These guys leave Baton Rouge, Louisiana early in the morning, loaded down with crawfish.  They drive to Dallas, spend a few hours cooking it up on this awesome trailer, and then head back to BR.

It really is so neat to watch!

And yes, it was DELICIOUS!!!

There were a lot of activities for the kids, and Langston was on his best behavior.  The paddle boats had just closed before we could get him down there, but he didn’t mind taking a look at the fish in the water, instead!

On Monday, I got excited to get a Pinterest project done and I had two handsome helpers escort me to Home Depot for our wood supplies!

They were happy campers in there.  It’s it every boy/man’s haven???

I’d be lying if I said I wasn’t so so very excited to bring a baby girl home this summer to be part of our family!

Right now, it’s sitting by our front door because I love admiring it during the day. :)

What I Love About Sundays

We are a pretty busy crew, ALMOST all of the time.

But Sundays, those are usually my favorite days.

They’re my favorite because I can almost always guarantee it’s a day we will just be.  After church, we’re lazy.  We spend the day just hanging out together.  Sometimes we nap, like today, and sometimes we play.

We created a special memory this evening with the boys.

Jeff took about an hour to go throw his fishing line in to a little pond near our house.  When he finished, he came home to tell me about the turtles he saw and how we really needed to take the kids to see it sometime.

Since the boys had already eaten dinner and been bathed, I said, “Let’s go right now!”

We hustled out the door since we had about 30-45 minutes left of daylight.  Jeff grabbed some tortillas and we strapped the boys, who had no idea what we were doing, in to the car.

There were about 15 turtles in the pond loving the bread pieces thrown to the water for them.

We even got to see an alligator snapper.  I never really knew the difference between those and the regular turtles, but the difference was pretty obvious.

Their heads are huge and just look at that tail!!  Crazy big!

The boys loved watching the turtles and Riverson just kept saying, “Wooooowww!”  It was super cute, but not as cute as hearing him say “turtle” for the first time.

As a parent, it makes you feel good to teach your kids something new and to be able to show them something they’ve never really experienced before.  Maybe it’s the teacher in me, but I soak up those little opportunities.

After Riverson realized we didn’t bring the tortillas for him to eat {yes, a few pieces went in his mouth before he figured it out}, he loved throwing the pieces in to the water for the turtles to eat.

I’m so thankful for being able to make family memories doing just the little things.

I just love these lazy Sundays.

Celebrating 5 Years of Marriage

We celebrated 5 years of marriage on Saturday and it was kind of surreal.  Although we have been through SO much as a couple, it’s so hard to believe it’s been 5 years since we said, “I do.”

It was fun to look back on pictures of our history together and laugh about times we have shared.

This is one of my most favorite memories.  Yes, the Texas Rangers mascot Jeff proposed to me at a Ranger game, in a suite, with my family surrounding us.  It was an amazing night and took me totally by surprise.  He had been scheming it up with my aunt and uncle for months.

Look at this picture carefully.  The horse hit Jeff in the leg and it knocked the ring loose from the box.  The ring is actually in the air in the picture.  THAT was a scary moment. :)

I said “Yes” with ping pong ball earrings on.  Awesome.

I loved them when I saw my aunt wearing them many many years ago.  She passed them on to me that night. :)

Pure excitement!

That night turned in to this day, 7 months later.  I walked down the aisle and promised the rest of my life to my very best friend in front of all of our friends and family.

I love this picture for so many reasons.

  • It was a special prayer to begin our life together.
  • My uncle, who officiated the ceremony, was leading the prayer.
  • I love the view of the rose petals in the aisle.
  • I know who each person in the background is and I love knowing they took the time to celebrate us that day.
  • One of our arrangements is peeking in to the picture and it reminds me how gorgeous all of the flowers were.

Our wedding party.  I think it’s so funny that both of my dads are in the middle of the bridesmaids. I think it was one of those “get in where you fit in” moments, I guess.

The weekend wasn’t only about Jeff and me.  I had lots of time to be silly with my girlfriends.  Love them!

We finished up our wedding adventure in The Riviera Maya of Mexico for our honeymoon.

After an amazing weekend and an incredible honeymoon, we were ready to begin our life together.

There have been a lot of changes in the last five years.

Our family has GROWN!  We are BUSY!  But, we love it.

In spite of everything going on with the kids, it’s nice to stop for a bit and enjoy some time together as a couple….and that’s exactly what we did on Saturday.

Fortunately, our kids have the best grandparents, who love to spend time with them.  We shipped the kids off to them and enjoyed some adult time.

We wandered around downtown Plano for a few hours going in and out of shops before we stopped at a little pub for appetizers.

After, we headed home, got prettied up, and headed out for our anniversary dinner.

This was my hot date.

The one picture we got together was taken by our waitress and the flash is not so flattering for either of us, but it was the only choice.

We had so much fun together and I can’t remember the last time we laughed that much!  It truly did feel like a night from our dating life, before we had a life that was so invested in our kids.

We left so full, but still took cheesecake home for the fridge.  It was nice to see this waiting for me the next day.

Can’t wait to see what the next 5 years hold for us….and the next 5…..and the next 5……
